Not sure whether this is the right place for this query?
For the first time ever I have had a super crop of Fennel and wondered if any one has found a way of storing fennel other than freezing?

I'd be interested to see what others do - we just eat it when its ready, which isn't always convenient, but does mean we invite friends or family over to help us!!

Thanks for that realfood I will not try freezing - just have to eat it all   :)  :)

I don't think we will Susiebelle!
I was wondering if it could be roasted and then stored in oil in jars? Like you can with tomatoes or artichokes  :-\

or stored in damp peat like carrots, beetroot, etc, we often add the fresh top growth from them to salads during the winter  :)

Yes..I've seen them done like that in Italy..
..also Bob Flowerdew mentions in his book about pickling them..
