Why do my cakes not come to a peak in the middle anymore

different flour,
adding the flour to fast.

Am I missing something?  IMO, unless you are making butterfly cakes, a nice flat top to a cake is a good thing??

Yes indeed,,,
A lot to do with a flat top as you want for sponge etc is in the FOLDING
in of the flour,,,,,, qahtan
