Jayb - yes, the lazy way - just a dollop of Mayo on top plus Paprika.  All on a bed of cress.

Long way would have been to mash it into the yolk.

Looks good enough to eat, Tim.  I mash cayenne pepper into the yolks with a spoonful of mayo and then pipe them back into the whites.  :P :P :P

Chopped chives on top makes a good combination.  :) :) :) :)

lovely as always - our chives are well up also and the mention of cress - so easy to grow in the kitchen all year round just sprinkle on a damp piece of kitchen towel in a small container - fantastic on eggs and in salads and on anything really  ;D we always have some on the go
