Has anyone ever made leek chutney. I've been looking round fora recipe but can't find one, and am wondering if this is because it doesn't work or taste good?

I have not heard of one, leeks are a bit too good in soups and with cheese sauce and so on. They keep for months in the ground over winter, so seem to get used up without having to 'do something' with the surplus. Which is why we make pickles and chutnies from our produce.

I know a few years ago some one sliced them into rings and pickled them the same way you pickle onions and said they were good.

They probably will work fine added to a mixed veg type pickle such as piccalilli.  The texture of the various parts of the cooked leek may make it a little problematic too in a preserve too.

Just an update.

I tried out making some leek marmalade along the same lines as onion marmalade.
The end result tastes fine, but has a slightly squeaky texture from the leeks. Considering leeks keep so well in the ground anyway I would be tempted to suggest not to bother!

1.2kg leeks sliced into thin rings (or small dice)
900g granulated sugar
500ml vinegar
a few sprigs of rosemary in a piece of muslin

Dissolve sugar in vinegar in a pan and add muslin bag. Simmer for five minutes and then add the leeks.
Simmer for one to two hours, until a translucent jam is formed. The marmalade will set more in the jar, so don't over do it.
Ladle into hot, steralised jars.
