What to plant

I have just had the patio relaid & as a result have a large bank of waste material covered by soil (it would have had to go through the house to be taken away) at the bottom of the garden - see picture -

I am wondering what to cover it with, grass seems boring & too much like hard work, don't really want shrubs as it is in front of a hedge anyway, would it work if I planted loads of herbs?
