I have just made 3 jars of pickled eggs.  two with vinegar and mixed spices,  one with the addition of some demerara sugar to take the edge off.  I will decide at eating time which I will be sticking with.   Getting back to the big question.... how long do I have to leave them before eating ??? ???

you can leave them for one day or 6mths, the longer you leave them the more they take on the taste of the picking solution.
you may be a king or a little street sweeper but sooner or later you dance with de reaper.

I have never understood why any one would pickle eggs they are just like eating rubbery vinegar with a soft bit in the middle.

Pickled onions do still keep their onion taste but the taste of eggs is so delicate and there is so much can be done with an egg. Available fresh 52 weeks a year. What is the point of pickling them?

Last year i was told to do and try some in malt vinegar not the white....
They were the BEST ever and i do all mine now in malt.

I make pickled eggs when the eggs take over the house and the chickens are laying too many for us to use.  They are good in potato salads and the slight vinegar taste is less noticeable.  Do not eat by themselves though.

If you can't be a good example -- then you'll just have to be a horrible warning....

Used to make loads when I had the pub (I was soooo good to my customers), horrid nasty things - pickled eggs that is not the customers! It never seemed to bother them if they were only a week or so old although they did prefer those that had matured somewhat.

Yuk I'd much rather have a pickled onion though I have friends who say a pickled egg and a bag of crisps is lovely.......... I'm not convinced ::)

Not to worry,

I like the both of them. Pickled eggs and onions are MMMM.

I also like pickled cabbage, piccalilli, or pickled anything.

;)

Got them back now to put some tread on them
