Salting broad beans

Would it be okay to preserve broad beans by packing in salt? We are just running out of freezer space!

My dad always used to salt them in the sixties. Always liked them done that way as a child. He used to salt them down layer by layer in a large mixing bowl ,leave them overnight the pack them in large jars in the morning. Then when he used them rinsed them under a running tap. Don't know if all the salt is good for you though!

Thanks, jsut wasn't sure for broadies as I know you can do runner beans that way.

Sorry misread your post,thought it was runners you were talking about. Don't know if it would work with with broad beans. Sorry.

My mum used to store all sorts of beans in salt before we had a fridge. They were all truly horrid, and would probably alert social services nowadays due to the sodium content. Please dont inflict these on your kids!  :o

Lol! I have managed to fit them in the freezer. We are now going to buy a chest freezer for under the stairs. The freezer is full and most of the (freezable) stuff on the lottie isn't ready yet!
