Remove stalks and wash in cold water, add a quarter oz citric acid to every gallon of syrup or water, sterilise at 190f and maintain the temp for 10 minutes .
pack jars with selected fruit, fill to the brim with cold syrup or water, seal very firmly with rubber rings and caps, if using screw bands do not tighten.
Stand jars in steriliser and fill it with cold water up to the neck of the jars. Heat slowly to the correct temp with a thermometer, maintain at the temp for the given time. Lift lars out and allow to cool , tighten slightly, test for sealing after 48 hours by removing clips, lids should be fast on the bottles,
If you're not bothered about the appearance of the fruit, fill with boiling water or syrup, stick the lids on and pour enough boiling water on to cover the jars completely and leave them on the boil for the same length of time as before  :o ;D
think I'll make jam next year, less faff  ;D
