Does anyone have the preserves book from the river cottage garden series? I can't find my copy  :-[ I have brought a load of onions home ready to make the chutney (think he calls it a relish though). If so, could I have the recipe? Thanks

Thanks very much Fork, but that isn't the one. This one is basically onions, balsamic and light muscavodo sugar (I think). Made it last year and it was lovely. The book must be in the house somewhere. I must be going mad!

yes i do ( i am addicted). There is a Onion Marmalade recipe with balsamic vinegar is that the one?

It's a brilliant book!

Have 10.5lbs of onions slowly cooking down at the moment....

Nope still don't have the book!

Need to know the ingredients and quantities....

The method is just slowly cook onions and then add other stuff and cook.....

Makes 5X225g jars
100ml olive oil
2kg onions
200g Demerara sugar
150g redcurrant jelly
300ml cider vinegar
50ml balsamic vinegar
1 rounded tsp salt
1/2tsp freshly ground black pepper

if it is as good as you make it sound i think i'll be digging the onions out of storage ;D
