Having a bit of a glut, I've made some lovely broccoli and potato soup, but still got loads. Not very keen on it once frozen, so looking for a few ideas on how to use it up?

Hi Jayb I make tarts with it then freeze, Brocolli and blue cheese, brocolli and red pepper sauce, especially nice with wholemeal pastry.

mines not ready yet  :'(  But in the meantime I can dream of quickly stir frying it with a bit of olive oil, some chopped chilli and garlic, and then mixed in with some spaghetti...... very quick and VERY tasty  :)

Mmm all sounds good just the insperation I needed. Pasta for lunch tomorrow and just so happens I have a nice bit of stilton ....

What's the best way to freeze the tarts, so they don't go soggy?

I had put some in the tunnel followin another crop so had a really early crop, what with that and the calebresse that's been going all winter I'd lost a little enthusiasm! But no more!

Tim I'm hoping to see which is nicer shortly, fingers very crossed as its been a long wait.

Went to friend's last year who had a glut, he wizzed up the most incredible risotto with it and it was delicious.  I have recreated his recipe at home and it is a basic risotto base with white wine and good stock, add the psb, lots of parmesan and the juice of half a lemon, delish! :)

The glut has just started here in my garden plottie 8)

I picked an enormous amount for dinner tonight... recipe like 1066..which I intended to eat at room temp, so finished by the oil/garlic/chillies bit, lemon to be added at the last moment abt an hour ago? Duh! :-[ Best go and pick some more ;D

The only inspirations I can offer is
Monday
   to put a cheese sauce on it (like cauliflower cheese)
Tuesday
   the stalks can be grated with carrot (use a processor)
   ranch dressing on top and serve as a salad.
Wednesday
  chicken and PSB curry. Or part of a vegetable curry.
Thursday
  tempura. dip in batter and deep fry, serve with sweet chili dipping sauce.
Friday
  Mix with a tin of Campbell's cream of mushroom soup and a few cashew nuts over pasta .
Saturday
Quiche with ham and cheese.
Sunday
  steamed and topped with a pat of garlic butter

I think it freezes a bit better after making it into a meal, like curry or pasta sauce.
