Storing Jerusalem artichokes

Dug up the rest of mine this morning. Can I store them in sand, and if so, how do I do this?

I find that they store very well in plastic buckets with lids. Keep them somewhere cold or they will shoot.

To store them outside put them in a tub and throw a covering of soil on top.

For longer term storage, cook them with any other handy veg, run them through the blender then freeze.

Thanks, Eristic- they are in buckets now so just need to find some lids!

Which reminds me I must dig some up this weekend! I use buckets and dead compost... leave outside on the north side of the house ( by the kitchen door) no lid so it stays damp...  :)
Forgot to say, old buckets with holes in the bottom...  :-X
