I know, really simple...but my mums cheese straws used to be lovely and all my efforts turn out like tasteless cardboard. Anyone got a foolproof recipe?

apart from anything else dont forget mustard and cayenne

Rather than cheese straws, why not try freshly grated Parmesan, little piles of it on a baking tray, put into hot oven for about 5-10 mins, remove from tray with a slicer, and when cool they make lovely crisps.  I made them one Christmas, and apparently they are delish.  Couldn't try them myself, as I'm allergic to cheese.

Oh yes, Katie, little tweeter's right about the mustard powder (Colman's of course 8)) and the cayenne, and really strong mature cheddar too.....ahhh, cheese straws....christmas bliss ;D

PS cheese straws AND parmesan crisps.....HEAVENLY bliss ;D ;D

roll out puff pastry into a sqaure, 3mm thick; cover half with grated mature cheddar; brush milk on uncovered half and fold it over onto cheese covered half and use rolling pin to achieve 3mm again; repeat the above 3 times, shaking chilli flakes in on final fold; then brush with milk and grate on parmesan; cut into straws and bake at 200C for approx 15 mins... mmmmmmmmmmmmmm!

Look at this and see how the "Hairy Bikers" made their cheese straws with Parma ham and Gorganzola cheese....looks scrummy  :P

Only 4 days left to watch it though!

I think I will make some hairybikers cheese straws. Can you freeze them as twisted pastry straws and then cook from frozen ?

Test batch of straws and parmesan crisps in the oven as we speak! I may not be able to report back later due to crumbs of deliciousness!

I would think freezing them should work...pastry stuff freezes well?

;D
