Parsnips

My friend at the allotment gave me a parsnip, weighs over 2 lbs so will make soup if I can cut it up.  Looking on here need a recipe for veggie soup, have got pots and carrots.  What do I add to give a bit of flavour.  Any ideas please.

Depends if your a veggie or not? If not use a chicken stock cube, you can use veg stock or a mix.

Sweat off onions, carrots and pots
Add parsnip and cook till softened
Add stock and water, bring to the boil then simmer till the veg is soft
Blend or leave more like a farmhouse soup

You can add tom puree to give a more traditional colour, but if you do this add a handful of soft brown sugar to counter the acidity

Oh Borlotti - don't you find parsnips have their own flavour anyway?  Well, all I put in is an onion and a chicken or vegetable stock cube. I have seen recipes where you can tart it up with some curry powder or chilli though.

Curiied parsnip is one that i make at work alot during the winter.

Sweat onion and garlic till soft
Add diced parsnip and fry gentle
Add about a tsp of curry powder and cook for about 2/3mins
Top up pot with stock and bring to the boil, simmer for about 20/25mins
Blend till smooth, taste and season
Serve with a chunk of crusty bread

1 tspn  ground coriander seeds, 1 tspn cumin seeds, half tspn ground turmeric and quarter tspn chilli powder  - added to  a soup made from about 2 lb parsnips, plus onion, butter and stock, as suggested by others - help to spice it up very nicely I find.  You can add a bit of milk, depending on how thick you like the soup.

Well did it, cut it up fried with onion, garlic, carrots, pots, and some curry powder.  2 pints of veg. soup and cooked for about an hour, slow gas, then liquidised it.  Was a bit too thick but tasted OK.

You can always let it down a little with some water or cream. Another tip to add depth of flavor in curried soups is to add some mango chutney
