Peach and Honey tart

This is an easy recipe, especially as it is hand formed! I use all sorts of fruit to do this, best so far are the plums,  peaches are fabulous , blackberry and apple work well too! Hope this recipe makes sense!

Pre-heat oven to Gas 6, 400f or 200c
I pack shortcrust pastry
2 Tablespoons Flour
3 tablespoons sugar
Victoria Plums, halved and pitted
2 tablespoons honey
Milk to glaze


Roll out pastry into a rectangle or round, put onto a heavy baking sheet, with a rim.
Sprinkle base with flour and 2 tablespoons sugar, leaving a 2 inch border. Arrange plums on the top of this, cut sides down, drizzle honey over. Pull up sides of pastry, over the plums. Brush the edges of the pastry with milk and sprinkle on remaining sugar.
Bake tart until crust is golden and plums are tender, about 35 mins.
Cool, or serve hot.
DELICIOUS with cream, or vanilla ice cream!
