I have pickled my shallots in Sarsons pickling vinegar - nothing added.  They now taste like pickled onions.  Has anyone got a recipe that will make them taste like Garners.  Is it just a matter of adding sugar?

Thanks

hmm.....how do Garner's taste? I've just bought some shallots, some Sarson's pickling vinegar, & I'll be putting the shallots in brine tonite, then...so what's this about sugar, whatever? Have I been missing a culinary trick here?

Hi you could try mixing up to 4oz of sugar or honey into the vinegar to make them a little sweeter like Garners, (i use about 3oz granulated sugar to 4lb pickling onions or shallots) or for a change could add a few mustard seeds, black peppercorns or a couple of chillies, that will give them a kick :)

This is roughly the recipe I use and you can't beat it for taste.
250g/9oz rock salt
2 litre/3½ pint water
1.35kg/3lb shallots, peeled and trimmed
2 litre /3½ pint white wine vinegar
1 tbsp each allspice berries, juniper berries, black peppercorns and mustard seeds
2 bay leaves
170g/6oz light muscovado sugar
They are really tasty without being too strong and last for ages.
