Aha!! It's a Chicken, Prawn & Chorizo Saffron rice. The grandchildren came over, sneaked a spoonful & went home raving about it!!

Tim - you just cannot put things like this on ...............without providing a recipe to go with it ;D ;D.  So, can you put us out of our misery and do so when you have a moment to spare please?  :-*  I can taste it just looking at the picture....

Nothing clever, really - just nice!!

1. Brown Chicken pieces in Olive Oil.
2. Add chopped Onion, Garlic, 1t Turmeric.
3. Add Chorizo ( I like this sort. A 2" piece cut in 4 lengthwise, peeled  & then slithered), 1 cup Basmati Rice, 1 pt Chicken Stock (real!). Cover & cook 10 min.
4. Add sliced Pepper (your choice of colour), Cherry Tomatoes & Peas. Cover & cook 15 mins.

PS I always use C for cup, T for tbs & t for tsp - so much easier!!

Hi Tim,

Just drooling over your recipe - where do you buy that particular chorizo from?  Just to save my legs/petrol.  Or is it a local shop to you.  Might make it tomorrow as I think my lot would enjoy it.

1. Chorizo? I buy this one because it is from happy, mountain reared pigs - ours is from Burford Garden Co. No mail order. But any similar will do - sausage shape is easier.

2. Serves? A bare 4 with 2 good Chicken breasts.

Oh, by the way - forgot to mention the essential!!

Infuse a good pinch of Saffron overnight - I  do it in Gin. Covered with film to keep the fragrance in.
It's for that, not colour! Add a few minutes before serving & blend in.

Oh dear, my mind is going?  And forgot to add - in my case - Jumbo Prawns, cut in half, to heat through. No more. Atlantic ones would do fine.

I think that's all!!

Oooh Thanks Tim,  I have found a similar looking chorizo on Sainsburys website so will try that.
