petits pois a la Francaise is a good way to use up cos lettuce. I don't shred the lettuce, but cut it into slices through the stem

Hugh Fearnley Whittywhatsit does a Lettuce Rissotto   (which reminds me I must buy some more paella rice!)

RT's type of peas are one of our favorites, and you can also braise lettuce such as Little Gem.

Had rocket on my pizza last night......last 5 mins, throw on the rocket and drizzle with olive oil.
I often throw it into pasta when you add the sauce at the last minute.
Also found this recipe, not tried it though

how about a rocket pesto sauce for pasta?

My Italian friends used to make a lettuce & onion frittata.....sweat down sliced onions, cover with shredded lettuce, pour over the beaten eggs with seasonings..then do the usual frittata bit, topping with grated cheese if you like.
