I have the same problem,  i have just started harvesting the ones that are bolting and using asap. They will not keep ;(

On the good side pick out the largest 2 and leave them to go to seed and use it next year instead of buying seed ;)

Do use the scapes you take off. They, not unnaturally, taste of onion and chopped up can be used just like onions.

or....if you nip the flower of but leave the bulb to mature as long as the others you can still get some onion for your money, however they wont keep so you have to find a use for them (they are sort of open inside - not the normal tight onion layers). These japanese onions dont really keep long after harvest in any case.

So many of mine - mainly the overwintering ones - went to seed last year.
I used a recipe for onion chutney from the Recipes section and they were brilliant after all.

Just checked, and a lot of the overwintering onions are going the same way as 2007.

Ah well, out with the jars and the sugar and vinegar!
What if the hokey cokey is what it's all about?

How do you manage that? there is not a single weed to be seen on that patch!!! Even once I have weeded there are loads of little seedlings around the place, they get between every onion and they are a bugger to get out, especially the chickweed  :-[
2012 - Snow in February, non-stop rain till July. Blight and rot are rife. Thieving voles cause strife. But first runner beans and lots of greens. Follow an English allotment in urban France: http://roos-and-camembert.blogspot.com
