Chocolate Prune Cake

Made this yesterday, thought it was good, had a slice today and it's even better!!
1 cup pitted prunes-chopped
1 teaspoon baking soda
1 cup boiling water
1 cup butter
1 cup sugar
2 eggs
1 3/4 cups flour (SR)
2 tablespoons cocoa
Preaheat oven o 350f. (I did 160c fan oven)
Prepare a bundt pan. ( :o greased and floured and bottom lined a 6" cake tin)
Sprinkle soda on prunes, pour boiling water over and allow to cool.
Cream butter and sugar in processor, add eggs,add prune mixture and whir about 15 seconds.
Add flour sifted with cocoa.
Mix till blended with pulse motion
Pour into cake tin, bake 45-55 mins (or till skewer inserted comes out cleanish, it will be slightly moist.)
When cool, turn out, sprinkle with icing sugar if you must, but I don't think it needs it.

Mmmmm. Like both prunes and chocolate, so will be trying that recipe!
Out of interest, why do you soak the prunes in the baking soda and water?

Like in sticky toffee pud, it makes it a bit lighter. That's how it seems to me, but maybe there is another reason someone else knows?

Prunes are good for the bowels
Chocolate is good for, EVERYTHING.
It has to be good for you.

Must be extra sexy served with thick cream.

I thought that myself PH, but am a non dairy person. Alpro cream substitute is a good alternative though. ;D
