Ketchup Recipie

G'day all.

Just after having lunch with a friend who had homemade ketchup! It was delicious!!

He wouldn t cough up the recipie however, so one thing led to another and we are now having a ketchup competition!  :P

So..................being a complete newbie to ketchup making, can anyone give me a recipie or two. I did find out that it is really the spices that you use that give it the umph!, cinnamon, mixed sice etc.........

Any secret combinations/recipies you can impart??

Hi, this is the one I make.

a teaspoon that holds 5 ml liquid is fine, always make it level.
a cup is one that holds exaclty 250ml liquid

50 mediun sizes tomatoes, ideally Roma type or a blend.
3 large finely chopped onions
2 large very finely chopped red peppers
1 clove garlic
3 teaspoons salt
3 teaspoons celery seed
3 teaspoons whole allspice
3 teaspoons whole cloves
3 teaspoons peppercorns
6 teaspoons mustard seeds
1 bay leaf
3/4 cup soft brown sugar(packed down in the cup)
2 cups of cider vinegar

Wash the tomatoes but don't peel.

In a large pan put the veggies, garlic and salt, and simmer for about 25 minutes till soft.
Press through a sieve to remove all skin and seeds.
Tie all the spices in a piece of cheesecloth put back in the large clean washed pan ,add the sugar and sieved tomato , Cook fairly quickly ,on a good simmer  for about 1 hour,stirring often to prevent it scorching. It needs to reduce by about half.
Remove and discard the spice bag, add the vinegar,simmer another 30 minutes or so till it thickens again.

Pour while hot into prepared bottling jars leaving 1/2 inch head space.

Process  jars by putting in a very large pan and completely covering the jars with water by 2 inches, bring to a full boil, boil  for 10 minutes, remove jars and allow to cool.

Next day, check jars for  correct sealing and store in a cool dark place.

This will make you about 6 pints.

It is very good.

My recipe is very much the same as yours, and my kids are addicted to tomatoe sauce and they love it, I use it for dips for fried chips, bolognaise sauce, and tons of other dishes, the kids have no idea they are eating healthy lol

I shove all sorts in, courgettes,celery, chilli, onions..everything my grandson doesn't like,
don't put salt or sugar in before I freeze it though  :)
