Fishcakes - got me worried - how mushy & why?? Don't know why or how. You, of all people. Not teaching my Grandmother - long gone - but She taught me a lot. So? Please ignore anything that doesn't apply! (I've just done all this but the thing said "server gone away" so I lost it. B*****r!  DO SAVE anything that you have put your heart into!!

Now - to stick my neck out - this is what we did today.

1. Fish - tinned, fresh, whatever. This was broken off a piece of frozen Salmon given to us at Christmas.
2. Mash - good wodge of Butter.
3. Half & half? Or 2 Potato to 1 Fish? That's us.
4. Handful Parsley, Spring Onion tops - chopped.
5. Tbs ground Mace (Curry Powder etc), Maldon Salt & Black Pepper. Tbs Worcestershire Sauce (Soy, Chilli, Tomato)
6. Beaten Egg. Form till squidgy but not exuding liquid.
7. Flour well. Shape.
8. Chill to firm.
9. Beaten Egg & Cheesy Breadcrumbs.
10. Non-stick pan, 5 or 6 slurps Mellow Yellow English Rape Seed Oil - or whatever. 8-10 min per side. But crisp bottom before turning.

Whatever this may or may not have achieved, it's kept me out of of harm's way for - now - half an hour!!

Ruddy ada tim, I'm drooling.  What do you serve them with?  Parsley sauce and a few peas, or baked beans?

I was just off to noddy-byes, but the pictures have made me feel quite peckish.  I think I'd best be off to beddy-byes, and dream about eating them!!

Meant, of course, add Egg till squidgy- then form. Doesn't matter if they're floppy.

And:
1. Fresh Fish - cooked, of course.
2. Mace (or Nutmeg) - I was using a non-U spoon, so a scant tsp?
3. Lemon juice & zest?
4. I've now decided that I prefer tinned wild Salmon to fresh!. Quite a different flavour!

fab with crab meat and a touch of ginger - said it before you do eat well in your family  ;D

At the price of Crab - £14/lb plus carriage??

Actually £16.56 for fresh from Martins Seafresh.

Always best fresh, but John West at £6.00/lb is a fair price.

Even then, typical recipe uses 1lb for 2 people. Great if you live in America.
