ideas wanted please :)

i've bought a seweet pototo and a butternut squash.
i'm cooking dinner at my mate's tonight and am trying to introduce her to new things and healthy eating.
can anybody give me any ideas on how to use them  ???
i want to roast a bit of each, but does anyone have tips on this?
any other recipie ideas will be very gratefully recieved!!

to roast he sweet potato i par boil then cook exactly the same as a roast potato bit of seasoning etc beautiful, they are also lovely baked in their jackets.
butternut squash put in water bring to the boil then take off heat and drain immediately then roast in with rest of the veg also very yummy, do not over boil the squash though it goes very mushy

sweet potato and butternut squash soup's fantastic, Rosie, you'd swear it had cream in, especially with garlic and a bit of chillie in.
we chunk it all up with onion, bit of salt and pepper, sprinkle with olive oil, roast for about 30 mins, quite a hot oven then blitz the whole lot, some stock added, yummy with crispy bread
mind you, we roast it the same to eat  :)

The good thing about both is that you do not need to peel them.  Just slice them into large chunks, then for the sweet potato, toss in just a little oil, sprinkle wiht crushed chilli seeds or powdered paprika and roast until done.

The butternut squash is good roasted sprinkled with either honey to enhance its natural sweetness or with crushed chilli to provide a counterpoint to the sweetness.

Alternatively you can slice the butternut through lengthwise then roast sliced face down, once done fill the cavity with anything that takes your fancy (savoury mince and rice or creamed sweetcorn, top with cheese (or breadcrumbs) and bung under the grill to brown.

Lol, butternut is a staple in this house, we have a load of different ways to prepare it, but stuffed with creamed sweetcorn is still my favourite.

In south africa we like to mash our sweet potato, add a blob of butter and pepper.  Or instead of pepper, a tiny bit of cinnamon.

With butternut squash, prick it all over, wrap the whole thing in foil and bake whole in the oven.. .. when cooked.. (soft throughout)  Cut in half, scoop out the seeds.. blob of butter, bit of pepper.. delish!!

Grew up on these veg :)  YUMMY!!!...

This is my Christmas Day one to serve with the meat.

I simmer the sweet pots in their jacket till part boiled then peel

2 pound sweet potato,peeled and cooked  as above cut into irregular  bite sized chunks
1/2 cup brown sugar
2 tablespoons butter
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup of orange juice.
Place sweet potato chunks in a casserole dish,mix all remaining ingredients till bubbly, pour over chunks and bake covered in a 350f oven for about 20 minutes, take off the cover for the last five minutes.

You can make this ahead to the baking part , then finish it on the day. Or finish then re heat to serve.

I have another one that has pecan halves on top that has cream in it. Ask and I will post, it is with mashed pots and very light.

Orange stuffed squash

3 small squash...I like Jack be Little pumpkins for this one too
1/3rd cup brown sugar
3 tablespoons butter
1/3rd cup orange juice
1 teaspoon salt
2 tablespoons chopped pecans

3 acorn or other small squash sliced in half
bake squash in oven till soft, about  40 minutes,remove all flesh, mix sugar, butter, and orange juice with flesh, mash till smooth, pop back in jackets, sprinkle with chopped pecans and bake in 350f oven for about 15 mins.

I have a nice pumkin/squash ice cream and my very favourite Pumpkin chiffon pie which can be made with squash..it is on here somewhere, it has a ginger crust.
