Has anyone ever used pears to make jelly? My mother's pear tree is bent double with pears and we are looking for new ways to use them -she perfected a delicious pear trifle last year!  I will use the same recipe as for all fruit jellies, but are they low /high in pectin?

I made jelly last week using cooking apples and pears; this has set nicely. Stew the fruit with the cores to extract the maximum amount of pectin. I flavoured my jelly with brown sugar, cinnamon, cloves and allspice.

That sounds delicious , dandelion. Made crab apple jelly this week, one lot straight crab apple and the other two lots, one with chilli, the other with rosemary so will definitely do a spicey pear one.

I've also used pears to make juice. I've tried all sort of combinations , but my favourite was 40 % apple, 40 % pear with smaller quantities of plum and rosehip.

I think I will have to try to get this book off amazon - what is the title please? Could you post the recipe for pear and lemon jam and perhaps the pear conserve please (there is a pear tree on an very unused allotment that is just asking for scrumping!!)
