Pickling my shallots

Hi I am the wife of deanc and I have some shallots ready, I want to pickle them but I dont know where to start with them, please could someone point me in the right direction, sorry if i sound a bit stupid!! Thanx pollyc

I peel them, then cover them with salt, not completely, but you know, enough to have lots in the bowl.  I move them around in the bowl over a 24/36 hour period.  This keeps them nice and crisp in the jar.  Then I rinse them, dry them and pack them into jars nice and tight.

I do a sweet and sour type vinegar, can't remember the exact proportions, but I pour my vinegar of choice, cider and sarsons pickling vinegar 50/50 usually, a couple of heaped tablespoons of sugar, a couple of dry chillis, few black peppercorns and maybe a clove if I remember into a large pan and slowely warm it, stirring until the sugar has dissolved.  I keep it on a gentle heat to allow all the flavours to marry for about 15 mins or so, then leave it to cool.  I then pour it into the jars, minus the spices and chilli and add fresh then if I fancy, screw the lids on and pickles your onion.  Delish.
