I have looked in all the cookery sites i know of to find an old fashioned
curry recipe that my mum used to make, with apple,sultanas, plum jam etc.
but cannot find one, :'( can anyone help? .

You seem to have set out the recipe?  But not Indian!! My Wife likes that one.

And while here - may I mention Pappadums/Papads? All that I've had in 'Indian' restaurants have been small dried up microwaved (for convenience) things with a rather bitter taste.

May I urge you to try Lijjats - in various flavours - &, although they say cook any way, truly the best are fried 3-4 secs on each side in 1/8in oil - turn with tongs - & then stacked vertically to drain dry.

I get those when i go to Brum! They are soooo much better than pappadums. Love curry, going to have prawn curry tomorrow now instead of planned chilli.

what's a good recipe for prawn curry then?

I learnt north indian food from friends and then veg food from genteel south indian cook book

I've never tried making fish curries.

All depends? Not a lot different from any other. But what sort of flavour do you like? Just thoughts.......

1. Fish - cut thick - needs only 10 min, basted, on top of the sauce. Cooked Prawns only need to marinade & heat through.

2. As a sauce, I like Galangal, Turmeric, Coconut milk, Cashews, Chillies, Lime or Lemon, Cherry Tomatoes, Shallots.

3. I prefer Tiger Prawns (from an approved supplier), cut to size if you like, rather than shrivelled Atlantic ones.

Emmy - remember that Papads & Poppadums are one & the same? Although some sites give them different treatment!

Just a thought -  I feel that 'authenticity' often boils down to :

1. Indian - asafoetida.

2. English -  fenugreek.
