Onions, Onions and more onions!

Well, not exactly a recipe, but I have just spent the best part of 3 hours peeling, chopping and frying my onions for freezing. Also in process of making a huge pot of beetroot chutney - only thing is all this cooking and I haven't made myself any tea, or stopped for lunch - McDonalds it is then- ah well! :D

How did you make your chutney?

I love the smell of frying onions!

I have all mine stored in the greenhouse, and all the little ones, and the shallots that I pulled today will be covered in salt tonight to be pickled tomorrow.

Hi louise, my chutney doesn't have a recipe, they never do!

I'd estimate:
6lb Beetroot - cooked
3lb Onions
8oz Raisins
1.5pint vinegar - (cider)
1.5lb Apples
1lb sugar ( only had white, brown would be better)
various spices - I think I used cumin, coriander and turmeric

Just bunged it all in a pot and brought to boil - now simmering for 1 - 2 hours

EJ - I love the smell too - but whole house smells of them now - it's a bit much - don't know what OH is gonna say!

yes thanks K, i will pop some more beetroot in as i have been eating it :-)
