Triathlon Spinach.

I've never grown Triathlon but the stalks do look quite long, which can be a sign of bolting.
I kept harvesting spinach after they (Giant Inverno) started to bolt this spring. They tasted a bit bitter but after being boiled and excess water squeezed out it tasted fine.
