Having an AGA, the bit about pre-warming everything may be de tros but the general idea holds?

I know that there are 100s of recipes, but if an aged jet pilot has done this for 1/2 a century, any idiot can do it??

4lb Sevilles/3.5pt Water/1 Lemon/ 6lb sugar.

Pressure cook fruit in the water for 15 min/cool till you can squish out the pips - into a bag/cut fruit to size/ put into sugar & water pre heated to 105C/continue to cook  - uncovered - till you reach 105C again.

Then jar as usual.

Great Tim :) can I replace the Sevile's for sweet oranges and add more lemons??
I'll try both recipies and let you know how I get on

Don't know - but I believe that it's all the same in the end?

Oh, & of course, boil up the pips in a net with the rest!

PS Forget my remark about the AGA - I was getting 2 ideas mixed up. And I only add the flesh later because I like it freshish rather than stewed.

Interestng, the mention of thick bottoms. Never thought about it because the AGA has such an even spread of heat.
