Hi does anyone want my banana  walnut muffin recipe, it can also be made in a loaf tin, Ii is agood one for very over  ripe bannas, it is very moist.I will type if anyone is interested. XX Jeannine

Yes please, Jeannine, we seem to have a lot of overripe bannanas in this house - most go to the chickens but would be good to use some for us.

This recipe works well even when they are very over ripe.

I make mine in a Kenwood Major as I do it before I go to work and we have them for breakfast, but adjust the method to suit yourself, just don't fuss with them. It is a very forgiving recipe.

My recipe is in US cup measures, if you have a problem with this get back to me and I will convert it fot you, but it is very easy if you have a measure that will hold 8 fluid ounces, this is the standard size measuring cup in the US( it is about 250 ml)
Teaspoon holds 5 ml, tablespoon hold 15 ml,both level. These cups are available all over now in the UK.

I don't have time to weigh things out.

Butter or Marg 1/2 cup
Regular sugar 1 cup
Eggs 2
Bananas mashed  3..don't worry too much about the size unless they are very small in which case use 4.
Plain flour 1 3/4 cups
Bicarbonate of soda 1 teaspoon
Baking Powder 1/2 teaspoon
Salt 1/2 teaspoon
Chopped walnuts 1 cup.
Raisins or sultanas 1/2 cup

You can replace 1/2 cup of flour with natural bran if you want a bran muffin.

I literally chuck everything in the bowl, blast it for a minute,and it's done. The mixture should be lumpy, this is important and it should fairly soft consistency.

If you want to do it the fussy way.

Crean butter and sugar,beat in eggs one at a time,add mashed bananas and blend.

Blend flour with  raisins, nuts,salt, soda and baking powder and   stir in,JUST TO MOISTEN,don't beat it, it should have lumps.

Transfer to a  greased and floured loaf tin or use a liner.(9x5x3 loaf tin)   OR   12 Large American muffin cases(Tesco)

Bake loaf in  350 oven for about 1 hour, test with toothpick OR about 25/30 minutes for muffins


You can add chocolate chips instead of raisins

If I am trying to use up lots of bananas I usually triple the recipe if I am making loaves for the freezer  but I only use 2 loaf pans  instead of three.This makes  a bigger loaf both of which will go in the oven together(3 won't), you will then cook for 1 1/2 hours.
