Do you have to wait till the first frost to pick rosehips like I read somewhere on the net? Some of the ones on the way to work are such a lovely scarlet and look ready to go now! (And I'm impatient)

I have picked some as I love my rosehip syrup.  Thing is, after the frost, they are softer and more fleshy so you get more flavour and lush colour!

Do you have a recipe for Rosehip syrup, I wouldn't mind having a go at making some this year.

thanks

Can't you just freeze them overnight or pop them near the back of the fridge to mimic frost?

Is it the wild (dog) rose that you use?

This is not tried and tested, but I'm going to roughly follow this recipe:

http://www.bbc.co.uk/radio4/womanshour/food/recipe93.shtml

But if you have a recipe EJ, I'd love to know what you do.

The freezer thing worked for me with sloes Moonbells, so I will give it a shot with the rosehips.

Yes, wild dogrose hips - lovely and blood red on our allotment at the moment!  I will have to find the recipe, it is in one of my very sticky preserve books.  :D  The art is getting is clear with no teeny little hairs floating in it.  In my latest large jar, there is one, just one teeny weeny little hair that I can see!  GGRR.

Love that recipe

"Boil 3 pints (1.7 litres) of boiling water"
