shallot seeds from flower heads

Does anyone know if seeds will still form if the flowers - which have been in flower for over a month - are removed from the plant? There are two flowers from which I would dearly love to harvest the seeds, but the shallots need to be taken up now. How about hanging the flower heads up in a paper bag in my shed?
