Sorry I did not see your request until tonight.  Hope it is not too late.  Here is a nice recipe for you.

Recipe:
1 cup chillies (red or green), 6 cloves garlic, 2cm piece green ginger, 2 large onions, 1 tin smooth peach jam (200g)

Method

Put all ingredients except jam into a food processor and chop very finely.  Heat a little oil in pan and fry gently for 10 minutes.  Add salt and pepper to taste.  Add the peach jam and bring to the boil.  Simmer for 5 minutes.  Cool and bottle.

Enjoy

Here's a version using plums:
Plum juice and pulp - 1 litre
Small red chillies - 2
Fresh ginger - 50g
White sugar - 1300g
Vinegar - 100g
Peel & process ginger to a pulp. Cut chillis into rings & wash out seeds through colander, chop chillis with scissors into bits. Put everything into a pan and cook, bring up to 102/103 degrees C, when it will thicken slightly. Makes about one and a half litres.

Hi Jennym

Now that one sounds good - and I've just picked up a kg of victoria plums from Tescos at 99p for 500g so maybe I'll try this one out.
