I've been wondering what to do with all the blackberries on my plot. I still have 5 jars of jam left over from last year so I don't think I'll be making any more.  I was wondering about making some cordial.  Has anyone else tried this, and if so can I have the recipe please  :)

Any other blackberry recipies also welcome although not wine.

Thanks

Can't find recipe for cordial, but got one syrup.  Great on icecream, apparently.
Going to try this myself.  Sorry about imperial measures, but it is from a book I inherited from my mum, so about 30 yrs old!
Weigh fruit and add 1/4pt  water to each 3lb.  Place in lg casserole and leave in low oven for 2-3 hours. (I think I'd put it in the slow cooker).
Strain through sieve lined with muslin and press gently until all liquid is extracted.
Measure juice and add 12 oz sugar to each pint, and place in large pan.  Add a cinnamon stick or some cloves if you like.
Heat gently to disolve sugar, but do not boil.
When cool, pour into sterile bottles, but leave about 1 1/2 - 2 inches clear at top.
Screw tops on lightly.
When cold, tighten tops, label, and store in cool dark place.

NB It doesn't say how long it keeps for.
Let me know if's any good.

Thanks Shaz, I shall give that a go.  Also found a couple of recipies on the web to try.

Hi all,  :)

I too am still eating last years blackberry jam.

So I`m going to make blackberry vinegar. The blackberries are steeped in vinegar and sugar for three days before boiling, straining and bottling.
There are recipes to be found on the net, but thats broadly the process.

I`m saving all my vinegar bottles from pickling for this project.

It a taste from my childhood, good for coughs and colds and all that ails you, also good on yorkshire puddings and pancakes. Not alcoholic.

I am refreshed by the rain and the dew
And by thoughts of you...

Going to try blackberry vinegar too.  Know what you mean about a taste from childhood.  My mum and aunt used to make loads of it, (and raspberry).  I remember eating it on yorkie puds as a first course, the northern way.

Had forgotton all about it.  Thanks Columbus.

Something else to do with all the d**n blackberries!
