Hi - Thanks Tim, I will have a look at Delia - I was hoping to find a genuine French recipe, but at least Delia usually works.
Cornichons are French baby gherkins - so I guess any pickle for the curcubit family will work. I bought the plants in Boulogne and they seem to like it here - bit of huffing and puffing about the soil and the foodat first, but they are being pragmatic and growing OK now.
