Lucky you!  WOW!!!!  I would give my right, and left arm for access to that many heavenly figs!!

Fig jam recipe:

Ingredients:

3 1/4 pounds fully ripened figs
1/2 cup lemon juice
1 teaspoon lemon rind, grated
1/2 cup water
1 package (1 3/4 oz. size) Sure Jel
7 1/2 cups white sugar
Directions:

Trim stem from figs. Grind or chop figs and place in a large saucepan. Add Sure-Jel. Mix well. Place figs over high heat until a hard boil is reached. Immediately add all the sugar. Let come to a quick rolling boil that will not stir down. Boil hard for 1 minute, stirring constantly.

Remove from heat and skim with a metal spoon. Stir and skim for 5 minutes. Ladle into jelly glasses leaving 1/2" space at top. Cover with hot melted paraffin or seal with tops. Cool.

This recipe for Fig Jam serves/makes 12 half pints

Fig jelly recipe:

Ingredients:

1 cup figs
2/3 cup sugar
4 slices lemon
Directions:

Mash figs. Mix figs with sugar, let stand for 20 minutes to form a syrup. Slice lemon very thin, do not peel just wash and slice across rind. Add lemon slices, let stand for 20 minutes longer to allow flavors to marry.

Bring to a boil, and boil until figs are as soft as you want them. Put into sterilized jars, top with paraffin, and seal jars.

This recipe for Fig Jelly serves/makes 2 jars.

Thanks Emma Jane for that, I did not want to turn away that much fruit, but have never eaten figs, except for dried ones at Christmas,

Great ideas, I'll let you know how it turns out later in the year!

You lucky thing, my little tree has yet to bear fruit and my mums has just been culled so only small expenive shop brought ones for me this year  :-[

One word of warning with such a glut coming your way - if your going to scoff them do it in moderation, they are a fantastic laxative and are so yummy that I have found it difficult to stop eating .... enough said!

I have seen a recipe for fig wine somewhere, if I remember where I will post it.

Enjoy your bounty.
