Polenta

I had this last night for the very first time - Yum! The long version with 40-odd minutes of stirring, crust afterwards on the pan requring overnight soaking, served with garlicky purple sprouting, olive oil and parmesean on top.

Does anyone have any suggestions for other things to have with it? (Veggie preferred)

It's uses are sooo varied.  Try http://www.bbc.co.uk/food/recipes/ for ideas. 

When left to go cold it can be sliced or cubed and griddled, fried or grilled. It can be a rich blandness, so plan the rest of the meal to balance that out.  Once had it griddled with oven roast cherry toms and a blue cheese sauce.

Never liked the idea of it when just cooked and "wet" reminded me too much of pocho (Kenyan maize-based "porridge") - yerk!

Would you enjoy mushrooms on polenta? My favourites are the big flat mushrooms with black gills (often cheap in shops), boletus, St George's mushroom, oyster mushrooms, and giant puffball if you are lucky enough to find them ;)

Just slice and fry the mushers fiercely* in a little olive oil/butter with optional garlic/chopped shallott/onion/fresh herbs/chilli flakes, add a splash of white wine/vermouth if you wish, season with salt and pepper and pour over the polenta. If you fried them fiercely, they will exude juices over the polenta in the time it takes for them to get to the table. Real convenience food! :P

*The test for fierceness is if the mushers squeak against the edges of the pan :)

Wish i hadn't read your post at lunch time after eating a warmed up left over from last night baked spud.

Wish there was more time in the day and a decent kitchen at work

Sorry about your lunch! We have a dodgy microwave at work and have to eat vile reheated stuff which may, or may not, be warm/hot/cold!!! I have sympathy!!

That sounds sort-of nice, but I am not very keen on mushrooms. With a nice-sounding recipe like that I ought to give them another go.

Bennetsleg, someone warned me about the potential blandness, so I made sure I salted well, added butter and lodsa parmesean!

Oven roasted tomatoes and blue cheese sounds good!

I meant to make some extra to try the frying/griddling, but got so caught up in getting the right proportion of liquid to powder that I forgot  ::)

My wife sometimes makes it simple: Just polenta, covered with fried onions and with a lake of Bisto in the middle. YumYum ...

LOL curry, I never had a glut of morels to try them with polenta - until now! {gloat} Would probably use shallots, wine and creme fraiche to make a sloppy mushroomy sauce :P ;D
