Anyone got their fave recipe to share, please? I've soaked and boiled some chickpeas for 10 mns.......now what?

Snap lishka, mine still in the pressure cooker :D

Here's what I'll do when they are cool.
Measure in cooked chickpeas to top of pint jug, plus their liquid.
Add
juice of 1.5-2 lemons
2 heaping tbs tahini
2+ cloves of garlic
1 heaping tsp salt

Put in a bowl and mash or blend til chunky or smooth. Add more salt or lemon juice to taste.
My son likes to add a handful of fresh green coriander, dried or fresh chillis, or a dash of toasted cumin. And treble garlic ;D

I dont have a recipe to share, but would just like to add that having always delighted in hummus, I was thrilled when I tasted baba ghanouj which is a similar paste made with roasted aubergines ...
The impossible is just a journey away ...

Baba Ghanoujs is to die for...  I adore it and have recently got a new recipe from a Lebanese lady that I want to try as it will be more authentic.  She says the aubergines have to be charred over a camping gas stove for best taste!  It is a shame Pitta bread sold in the supermarkets is like cardboard compared with the real thing.

yep, son at home on lenten fast which means lbs of bean-related dishes every day, more chick peas on the go now. I have a plastic tub of tahini which is like a brick at the bottom, all the oil at the top. Would be devastated to have no tahini in the house! :o ;D happy shopping lishka ;)

Thanks SS - won't be until tomorrow :( - & I'll be going to s'burys. Tip for you? My local shops selling 3 tins of various beans for £1. Got pinto, black-eyed,cannelli,broad, haricot & red kidney last time I was there for £2! - all 410gms.

Is son onlyeating beans, SS :o ;D. I made a chick pea and pasta soup tonight. Sauteed chopped onion + coupla chopped seeded chillies, added chickpeas + their liquid + veg.stock cube, then half a packet of Aldi's Best fresh spinach&cheese tortelloni + added water & simmered, lid on, til pasta cooked.

Hummus tomorrow ;D

My Fave recipe is,

2 cups cooked or canned beans
3 tbs olive oil
2 tbs tahini
1 tbs freshly squeezed lemon juice
1 or 2 large cloves garlic, puree/d and mashed with 1/2 tsp salt
Seasonings, fresh sage, tabasco, or sweet chilli sauce, S & P

Bung it all in the food processor (except the seasonings) blitz till smooth (I sometimes add some water if it is too "dry")
Season to taste!

Forget how easy it is to make! And it makes me wonder, why do they have low fat hummus in the shop, there isn't that much oil in their really for the amount you eat!

Soup recipe sounded heavenly Lish, making me hungry and it's only 10am :-[ ;)
Son is not eating meat, fish, cheese or animal fat during Lent, hence beans-and-rice (we get 2kg bags from the Asian market that will be sifted for rocks since last night, don't ask >:(). Is also demolishing sprouts faster than I can grow them (note mumly pride ;D ;D).

...but I AM asking...so what's the story about the rocks? Is he also eating pasta - spaghetti aglio-olio-peperoncino (yummy, that),  penne al'arriabiata?

Hello all - just joined this site  :D and the first thing I see is a discussion about one of my favourite foods.

One thing I find that helps when making hummus is to mix the tahini and lemon juice together first.  Lemon juice emulsifies the tahini and it gets very thick.  Keep adding the lemon juice (and you may need some water) until you get a  creamy consistency.  Then add this to the chick peas, garlic, oil etc before blending. (If of course you can stop yourself eating the tahini sauce on its own - add a little fresh garlic and salt to it and its superb on kebabs.)

When your hummus is done try adding whole pitted olives - with fresh bread this is a meal in itself.    Enjoy !!

Hello CS, and welcome to the hummus thread :D I've not made it before (although eaten loads) so I'm going to incorporate your Top Tip (AND the olives) into mine when I do it. Snag...had a Senior Moment last night & forgot to put the 'peas to soak.......feedback, then, on Monday ::) ;D

lishka, I was eating a spoonful of chickpea curry last night and chomped :'( on a rock exactly the same size and shape AND COLOUR as a chick pea >:(. Didn't scream, as didn't want to put son off beans, but watched in absorbed fascination to see if he had similar luck lol, but I got away with it, phew 8). Smuggled rock into flokati rug when he wasn't looking :-[. From now on I will check the beans for rocks on a white plate before putting in to soak.

You're right, under normal circs hollow legs would be brimming with fiery pasta, but he has given that up for Lent too. Would be a darn sight quicker and easier on ze teeth. Thanks for recipes in the new thread, was about to ask you for them!  ;D ;D ;D
