Frozen fruit

Just looked through the freezer - trying to make room and noticed we have a fair bit of fruit that needs using from this summer.

we have
Gooseberries
Raspberries
Blackberries
Redcurrants
Blackcurrants
Whitecurrents

About 2 containers (think plastic takeaway rice trays) of each (4 whitecurrants).
I would ideally make summer puddings but the wife & kids don't like the bread side of things. We would also prefer only to defrost one or two containers at a time.

Anyone got any ideas beyond the usual pies crumbles and poultry sauces especially for use with the whitecurrants. We also have a bread machine if that could be utilized in some way.

Apart from using in the Fruit cake recipe posted on here ages ago, we tend to whizz any of these up in the blender, push through a sieve, (the fruit pulp not the blender) and serve with merangues and cream. OR add to natural yoghurt. If you like rice pudding then why not stir in  some pureed fruit?
Gardening is the great leveller.

You could just make up the mixture for summer pud & serve it with ice cream - in fact I often freeze some of our fruit in that way. (Callaed a compote if you want to be posh) I also make a summer fruit  clafoutis which is excellent (in fact I think I might make that tonight). Use any of them mixed or singly on top of cheesecakes, or vary the crumble topping with scones as a cobbler. I have a fantastic recipe for a rasp & white choc flan if you wanted it. Oh, Another idea in a mag I have not actually tried is to put 142ml carton double cream & 140gr white choc in a pan & heat v gently to a smooth sauce, add 1tbsp white rum if you fancy it then pour hot sauce over frozen fruits & eat immediately as they start to melt.

Use white currants as red, they are the same in essence. I made a pie the othe night using 1/2 black & 1/2 white currants which was excellent. The white took away some of that pungency of the black. Anyway, must stop rabbiting - hope this has been of some help!

How about raspberries&yogurt ice cream?Very easy to make with natural yogurt :)You could make muffins or a custard tart with the blackberries.

I was quite interested in this too as I still have strawberries, and some raspberries mixed up with blackcurrants in the freezer from summer last year. I was thinking I would have to take them out sometime as don't know how viable they will be if they are in for much longer.  All good suggestions for their use but really attracted to yours beejay - my mouth is watering already, but bang goes the diet!  :) busy_lizzie

I shall just say the clafoutis was delicious  ;D ;D ;D

We always have loads of soft fruit so I'm always on the look out for ideas for the "file".

I do a sort of a fool with the gooseberries, but whitecurrants would be fine too. Very basic (no chef here) In a bowl, put a layer of custard, let it set.
Then a layer of fruit, cooked with a little sugar if you like and allowed to cool, then a layer of cream. Then more custard on top, allow to set and then another layer of cooked fruit, and another layer of cream. Rich and delicious.

A quick one - meringue (shop bought) coarsely chopped, mixed with raspberry and cream, served immediately. Could use blackberry for this too.

Flapjacks, made with 8 oz butter, 5 oz sugar, 2 tablespoons golden syrup, 4 oz blackcurrant, 12 oz porridge oats. Melt butter, gently in a pan, dissolve sugar, stir in golden syrup. when all mixed and fluid, stir in porridge and blackcurrants. Makes enough to fit into a standard baking tray, smooth it down evenly with the back of a wet spoon. Bake 190 degrees C for about 15-20mins (keep an eye on it) until golden. Cut into pieces.
