Aegean Pitta Pockets

Made this recipe last night and it was so delish I though I'd like to share:

The original has marinated pork in it, but I left that out to make it Vegetarian, and put the lemon juice and olive oil on the salad. I just fried the peppers in a little bit of oil to soften them and brown them, then added them to the rest of the chopped salad while warm, and stuffed the mix in the pittas. I didn't have any oregano, so left that out.

The quantities in the recipe made enough for 2 big dinner-sized pittas and the leftovers are going to be todays lunches.

I expect so. We haven't quite got the hang of tofu yet being new to this veggie business. (Actually I'm not a proper veggie, but OH is and I'm enjoying the different stuff we're having from not eating meat)
