Pumpkin seeds - thanks!!

Just wanted to thank Doris P, Derek F and others for explaining how they roast and scoff their pumpkin seeds, shells and all.  Tonight we are having pumpkin mash, and just for a try, I washed some seeds, dried them and dry roasted them with some maldon salt in a pan and WOW are they yum!  Have a slight popcorn flavour to them, bet they are great with syrup...in fact, instead of making peanut brittle next week, I might give roasted pumpkin seed brittle a go!  Am tempted to just cut open all of my pumpkins now just to get at the seeds!!!!!!!!!!!!

Hi Emma-Jane...was thinking of making peanut brittle myself...got a thing about it at the mo 8) Thing is I hav'nt got a sugar thermometer, do I need one??

hmm...I rely on mine totally now thanks to lots of burnt jams or runny jams or sloppy fudge or black toffee.  If you have a good eye, then maybe not.....yo uwill have to do the drop a drop in a drop of cold water and see how it sets test.

Thanks Emma, I am glad to be of help. I have another very large pumpkin (40 lb?) currently sitting in the living room, awaiting dissection. The seeds will not last long this time ...

Also try roasting them with whatever curry/cajun seasonings you have in your cupboard...a drop of oil, a bit of spice shaken over, lovely...

So, I thought I'd have a go at this pumpkin seed roasting thing..... skillet- check,  pumpkin seeds- check, okay, wait til they smell toasty........ mmmmm...... think i can smell something....... nearly there................
..... BANG!!!!! BANG!! BANG!!

The little b****rs started jumping out the pan - nearly took my eye out! Am nursing left wrist which was struck by hot, flying seed :( Think will phone Injury Claims 4 U and get compensation. Should clearly come with health warning ??? ;) Who to sue? Derek The Fox? Doris P?

They do taste good though - except that the seeds from my Crown Prince have super-thick shells so i'm having to split them to get to the edible bit ::) :P

Never mind, I'm sure my enormous payout will cover the cost of a personal pumpkin seed peeler ;D

Hmmm just how high did you have your heat ?  ;D Mine was rather gentle, so the seeds just gently toasted - gently ...

I found once the shells had been well toasted, they were fairly edible.

Oh.......ahem....yes.....they do start to pop like popcorn, or at least my crown prince did, and I agree, they do have super thick skin and I ended up binning mine of those as they were just toooo tough to be bothered with!

We were making some roasted pumpkin and roasted garlic soup last night, so decided we'd have a bash a trying the roasted seeds. My, they are fantastic. I can't believe I've gone so long without trying them before, I seriously feel like I've been missing out all these years  :).

We just roasted them in a little oil and a good sprinkling of Malden salt, looking forward to trying some spices and whatnot on them as suggested above ^^^. I notice how the flavour changed from almost pistachio to nutty popcorn as they cooled down.

The missus has earmarked the remainder of the roasted ones for some bread she has planned, she'd better get a move on though 'cos everytime I wander into the kitchen I grab another little handful. ;D
