Gingered butternut squash

Couldn't be easier but so tasty with just a shop bought squash has made up my mind to grow some next year.

Take a couple of very large knobs of butter and melt them gently in a large pot.

To that add about 2 inches of coarsely chopped ginger (3 inches you love ginger) and sautee it for 2 to 3 minutes.

Add a diced whole squash, a little olive oil and water and cook until done.  Eat as cubes, roughly mashed or nealry pureed.


I used it as a base for some pork fillets in Calvados cream sauce and was superb so now on my list of comfort food!

Pork in calvados cream sauce. Why did you have to mention that just now! We're having baked beans and jacket spuds  ;D

Will try that one. I ususally just make soup. I suppose you could roast that too!!
