Indian style courgettes

Tonight I made Gujarati Sem (french beans in mustard seeds from the Madhur Jaffries cook book) to freeze as it does freeze very well, and is a good way to use beans that Ava will eat!

Whilst cooking, I was facing 20 or so courgettes and thinking HELP!  Then it came to me..... Gujarati Courgettes!

Thickly slice a large courgette, place in colander, sprinkle with salt and leave for 20 minutes

Rinse the courgettes and pat dry.

Brush the courgette with a little oil of your choice and frazzle on a griddle pan until soft and brown.  Put to one side in a bowl.

In a heavy bottomed frying pan/wok, heat a tablespoon of veggie oil.

When hot, throw in a tablespoon (or less depending on how much you like them) of mustard seeds.  As they start to crackle and pop, add 2 crushed cloves of garlic and keep it moving so it doesn't burn.

As it browns, stir in some chopped chilli (as much as you like!)

Stir is around, lower the heat a little, and add the courgettes.  Sprinkle over a teaspoon of salt and a teaspoon of sugar and carefully move the courgettes around so they get covered in the mustard seeds, garlic and chilli.  Cook over a medium to low heat for about 5 minutes, stirring gently so as not to break up the courgettes.

I plan to freeze this, but I did have a little taste and it was mighty fine!  A good way to use those whoppers that you missed!
