Chillie Fest

After a few years of trying I have managed to grow a fair crop of chillies (Dobies Chillie Collection) of different varieties and colour so I am wondering what to do next. Should I pick them all now or leave them on the plants? If I pick them any suggestions for what to do? I have looked at a couple of Chillie Jam recipes but there must be more to them than this surely.

I have dried them before and ground them up into single variety powders.
Also frozen them.
Chilli jam is delicious

I make Chili Sauce and Chili chutneys.  I also dry them to make powder, freeze them so I can chop them straight into  whatever I am cooking and make chili oil to add to stir fries.

Yes I grow too many!
Moved to Portugal - ain't going back!

I have whole dried chillies, blitzed dried chillies, frozen chillies, chilli oil and chilli jam.

One year I had so many gorgeous red, purple and yellow ones of different varieties that I threaded them on cotton and hung them up in the kitchen window to dry - very decorative for weeks and tasty afterwards.

id pick the ripe ones as soon as they are ready this will make the others ripen as mentioned  they freeze very well chopped fine in soft cheese and cheese scones  red tomato and chilli chutney is to die for hope this helps
