Funnily enough, we were talking last night about new ideas for courgettes, as we ate our pasta with summer veg.  Some of those recipes are a real inspiration.  Thank you!

Made courgette and tomato soup from a recipe from this site.  It is very, very tasty and easy to cook.  Shame I gave so many courgettes away as have none left.  :'( :'( :'( Yet!!  Can retype it if anyone wants it, not my recipe, copied,  it is has hot pepper sauce, only 1/4 teaspoon and worcester sauce and lots of herbs (my own dried oregano)  ;D ;D  Have picked some squashes, not sure what I planted but all doing well, must look up some recipes for them.

Courgette and tomato soup (copied recipe from this site)

Ingredients:
1 pound zucchini, sliced
2 teaspoons salt
2 tablespoons vegetable oil
2 onion, chopped
2 cloves garlic, minced (I chopped mine)
4 cups chicken broth (I used vegetable stock)
1 large tomato, chopped
2 teaspoons lemon juice
1/2 teaspoon white sugar
1/2 teaspoon dried oregano (from my allotment)
1/2 teaspoon dried basil
1/2 teaspoon dried parsley
1/4 teaspoon ground nutmeg
1/4 teaspoon Worcestershire sauce
1/4 teaspoon hot pepper sauce
salt and pepper to taste (left this out)
added a few stale mushrooms I had left over

Directions

In a large colander, sprinkle salt over zucchini slices.  Let stand 30 mins to drain, then pat dry.

In a stockpot, heat veg. oil over medium heat.  Sautee zucchini, onion and garlic in the hot oil for about 10 mins or until onions are translucent.  Sir in the stock and tomato; simmer for 20 mins.  Remove the vegs from the stock using a slotted spoon and puree them in a blender or food processor.
Return the pureed vegs to the stockpot and stir in the lemon juice, sugar, oregano, basil, parsley and nutmeg.  Season with Worcestshire sauce, hot pepper sauce, and salt and pepper (if required, don't think it needs it). Simmer for additional 5 mins.

Has anyone made different types of courgette chutneys and have a favourite one?
I have looked at so many I am confused.

They freeze in a curry quite well..

i'm sure if you sliced them and blanched in boiling water for 2 mins plunge in cold water and feeze then they would be fine..not tried it thought but can't see why not..

we chop them into small 'sticks', just freeze as they are and use in stir fries or soup..just found this recipe  :)

courgette and cheese loaf, nice spread with cheese spread
75g butter
200g courgettes, weighed after top and tailing
225g self raising flour
1/4 tsp salt
1/4 tsp cayenne pepper
1/2 tsp mustard powder
125 g extra mature cheddar cheese, grated
3 large free range eggs
4 tbsps milk

melt the butter
grate the courgettes and put to one side
stir flour, seasonings in a bowl and add cheese
in a separate bowl, lightly beat the melted, cooled butter, milk and eggs together
add the flourand courgettes and stir until just mixed
put in a 2 lb loaf tin and level the top
bake for 45-50 minutes or untilthe top springs back when lightly pressed

I haven't made it yet but will be trying it next week

OH does not like courgettes much but likes the following

Soften 2/3 chopped shallots in olive oil over gentle heat. Add 1 or 2 thin sliced cloves garlic and fresh herbs - I like lemon thyme. Add 2/3 chopped courgettes. Don't cut too small or they go mushy. Cook over moderate heat about 5 mins. Now add 2/3 skinned and chopped tomatoes and a little tomato puree. Stir in and allow to heat through. If there is a lot of liquid then turn up the heat a bit.
Season with salt and black pepper, then add 3/4 dessertspoons of creme fraiche.
Let this warm up a bit before trying to stir it in. Tip into an ovenproof dish, top with cheese and brown under the grill. Yummy.

We use the full fat creme fraiche as it is thicker so makes a better sauce. Think it would be nice with pasta.

Be a bit careful with the hot chilli sauce, put half a teaspoon in last time I made it and OK with loads of bread and butter but tasty but perhaps a bit too hot.  >:( >:(

I tried a Jamie Oliver reciper for a courgette salad at the weekend. Basically it was thinly sliced and the cooked on a very hot pan until slighlty blackened. Then had chopped garlic (from the lottie, chilli (said red but used a green one from the greenhouse) and mint (three types from outside the back door) chooped and sprinked over. Then a drizzle of olive oil and lemon juice. It was lovely, very ligght and refreshing. Would have worked very well with Goat's Cheese or Feta
