Topic: What do you substitute in recipes

We have been on holiday for 2 weeks so have marrow sized courgettes and many bolted romanesco.So, today I'm making mustard pickle with onions that have been damaged, purple podded beans, romanesco florets and chunks of marrow. What do you use up?  :)
