Banana chocolate chip Bread

This has to be the best banana bread recipe I have found so far, have tweaked it from the original and the stuff is wonderful! (probably because one of the things I added were chocolate chips instead of walnuts which we are not fond of! ;D  )

Preheat oven to 350f  Gas 4

Grease 2 large loaf tins and flour, knocking out excess.

1LB Plain Flour
2 Teaspoons Bicarbonate of soda
1 Teaspoon Cinnamon
1/2 Teaspoon salt
4 Large eggs at room temp.
6 oz soft brown sugar
7 1/2 oz Granulated sugar
8 fl oz vegetable or sunflower oil
6 Large VERY RIPE (mine were almost fermenting!!) Bananas mashed
2 fl oz creme fraiche
2 teaspoons vanilla
200-400g milk chocolate chips (or dark if you prefer, or 4 oz walnuts chopped)


Sift flour, bicarb, cinnamon and salt into a bowl.

Beat together eggs and sugar with an electirc beater ubtil very pale and mix forms a ribbon when lifted. (about 10 mins)

Reduce speed and add oil in a slow stream, then mix in creme fraiche, bananas and vanilla.
Fold in flour mix and chocolate chips, or walnuts

Divide into tins and bake for 1-1 1/4 hours until brown and skewer comes out clean.

Cool loaves in pans on a rack for 10 mins, then turn out onto rack to cool completely.
