Courgette recipes

Looks like there is a glut again.

grate courgettes and mix with  SR flour (like with onion bargees) deep fry  in hot oil til crisp and serve with a dip

slice longways and use instead of pasta in a lasagne

Peel and blitz with skinned tomatoes season to taste and use as a pasta sauce.

Slice and cover with salt overnight. rinse, dry, bottle and add preserving vinegar with some sugar to taste.

Chop up and slowly cook with chopped onion add a tin of chopped tomatoes a tablespoon of tomato ketchup and a table spoon of tomato puree, season to taste then when cooked add some cooked pasta and leave to go cold== Pasta Salad.

I made a salad from some last night. I cut them into legnth-way slices, and roasted them in the oven with some olive oil. Then cooked a few a the 1st french beans, the last of the broad beans (sniff...) and some peas. let them all cool down and squeezed some lemon on them and a handful of parsley and basil

Courgette au Gratin
Slice courgettes in half lengthways. Flash fry the cut face in a fryingpan at a high heat in a little butter or oil until it is sealed and has some colour. Brush skin with oil as you are taking them out. Place in a baking dish/casserole skin side down. Cover cut faces with some grated cheese (not too much) Place in an oven at gas 6/7 (200-225) for about 5-10 minutes until the cheese is browning (or you could just put them under a grill)

Take a bag of unwanted courgettes. Place them on a neighbours front step. Ring the bell. Run away. Watch their expression of surprise from a safe distance.

I use the glut on soup.
Onion, Garlic and a chilli fried in olive oil.  Add chopped courgetees and a chopped sweet potato (or carrot or cerlariac or...), simmer, blend and season ( I use Thai fish sauce cos I love it) maybe some lemon.  To finish add fried chorizo togerther with any oil that rendered out...

Freeze it for a winter reminder of the gluts of summer...
Moved to Portugal - ain't going back!

Sliced, salted overnight, drained - a great topping for pizza, over the usual tomato and mushroom, sprinkled generously with parmesan.

 Thanks for the recipes, i was at a loss as to what to do i have so many we shall look like a Courgette, if we eat many more. ;D

Chocolate Courgette Cake or Pudding


Ingredients

120g butter or block margerine
125ml sunflower oil
300g caster sugar
3 medium sized eggs, beaten
130ml milk
350g plain flour
2 tsp baking powder
4 tbsp cocoa
450g courgettes, peeled and grated finely

      

Method



1. Line a 20 x 35cm baking tray with baking paper and set the oven to 190ºC/350ºF.

2. Beat the butter, oil and sugar together until light and fluffy. Gradually add the eggs, a bit at a time and then the milk until mixed thoroughly.

3. Sift the dry ingredients together and fold into the mixture.

4. Stir in grated and peeled courgettesand spoon into the tin.

Bake for 35 -45 minutes. Let it rest for 5-10 minutes before turning out on to a rack to cool or you can serve it hot with custard or make a peppermint sauce. (That is just a sweet white sauce with a few drops of peppermint essence)

Courgette Balti

Slice three decently sized courgettes into sticks (I cut them in half to make two big fingers, then cut the fingers in half lengthways then chop those bits into 3 or four lengthways too)
peel and slice a couple of carrots into rounds
a teacup of chopped onion or shallots
four italian  tomatos, peeled, chopped and microwaved soft or half a can of chopped tomatos
Sachet sharwoods balti paste or a couple of tablespoons of Patak Balti Paste
some cumin seeds
some cooking oil
soem red wine (optional)

Start the oil off over a high heat, after about 30S add 2x heaped teaspoon cumin seeds
stir-fry for about 15 seconds
Add the onions/shallots.
stir to coat
Fry on high for a few minutes, stir occasionally
add carrots
fry on high for 3-4 minutes on high, stir occasionally
add courgettes
fry on high for 2-3 minutes, stir occasionally
add balti paste
stir-fry on high for about a minute, stir briskly to coat properly.
deglaze with the red wine (not too much, just to release)
add the tomatos
set on a low heat to simmer until the rice is ready.
Serve with rice and another curry dish with some protein in it or pig out on courgette balti on toast with grilled/melted cheese....

love the sound of balti combined with cheese on toast!

we have been using our glut in a frittata type thing,saute thinnish slices of courgette in butter with a touch of garlic,onion and chard stems if you also  have a glut of that! then pour in beaten egg,let it seal a bit then shove it in the oven till set. tip the frying pan upside down once cooked to release it,slice and eat with your own potato wedges and baked beans,scrummy!
i should say the pan we use is a little one,and the handle is safe to put in the oven
when the going gets tough,the tough go digging

The balti dish reminds me of a dry fry I do with courgettes. very similar ingredients (cumin, corriander, tumeric, garlic, ginger and a chopped tomato and onion). Basically just fry them up and have them with some rice or indian bread.
I also like the way you add some red wine to the stock ChrisCross! A friend of mine always adds white wine to his green curry pastes / stocks  8)

Going to stuff some tonight with other veggies, and lots of herbs, pine nuts etc. And have them with some cous cous (similar falvours, but with toms and cucs added) and a bit of salad. Yum!

Two courgette recipes:
Slice courgettes thinly, grill with olive oil on griddle/frying pan with sliced spring onions and garlic. Sprinkle lemon juice over. Also grill halloumi cheese until browned and a few tomatoes sliced in half. Also lemon juiced. Then serve over pasta or salad, with chopped fresh mint over the top. Yuuuuum!
