French style Crepes

We did talk about pancakes on Shrove Tuesday  methinks but yesterday I fancied pancakes. I am not a great pancake maker but since I live in Brittany it's getting a bit much to not know how to make the local speciality!!! And I dug out a real Breton recipe and I was not disappointed. I think they were the best pancakes I ever made. So I am sharing it with you

BRETON PANCAKES

Ingredients
250g plain flour
pinch salt
few drops vanilla
1 heaped tab sugar
2 eggs
500ml half water-half milk
2 tabs rum (add it to the liquid)
50g butter melted or 2 tabs oil

butter or oil to grease the pan

Usually modus operandi: mix dry ingredients then stir in the eggs as much as possible. With a whisk, add the liquid gradually, in alternance with the butter or oil, and when it is a thick paste, really beat it with the whisk until very smooth. Then continue adding the liquid, beating well.

Now very important. leave the batter to rest for at least 45 minutes.
Then stir and cook in a pretty hot pan (I put the heat about 2/3 up).

This quantity made about 12 or 14 pancakes. Eat with your favourite topping (lemon + sugar, nutella, jam).

hhhhm dont posess any Rum antipodes,(ive drunk it)... ::)
would a decent brandy do the same job,although im not a sweet pancake person but jude is.

I will dig out mums German pancake recipe as its savoury and suits me more.

very nice :) will have to give it a go :)

I did have a crepe pan i got in france a few years ago it was just a flat frying pan and made the best fryed eggs unfortunatly it died and i cant find a replacement :(

Dunno if you have a M&S near you cambourne7 but we just got a new crepe pan from there ,they had loads and it was only £10 squid.

Gazza, yes you can put brandy or calvados but I do find it's nicer with rum. These ones are a little sweet but not too much.
Here in Britanny the other type of crepe is a buckwheat one. They are made in a similar way - use about 225g of buckwheat flour and 25g of white flour. Teaspoon of salt. Add one egg and mix that in as best you can. Then get a small jug of cold water and start whisking the batter with the cold water, You will probably add about a cup of water. Once it starts to look like quite a thick batter (like about cake batter consistency), stop and let it rest for about 15 minutes. Then add some cold milk, about 100ml, whisking, until it is pancake batter consistency. Add a little oil or melted butter, then fry. Best if you can also let it rest about 30 minutes to an hour before frying.

Cambourne, crepe pans are good, I don't have one but i have an old tefal frypan that I use only for crepes. They don't seem to stick that way :)
