how do I make peppermint creams?

I enter a lot of village shows. tHis year there is a class for peppermint creams. I remember making them as a child but I can no longer find the recipe. Can anyone help?

Hi Miss Baritone,  This is one I used to use for School Fetes etc.  It is a very plain and basic one, so someone might be able to come up with a fancier one. But here goes:

Ingredients for 25
8 ozs icing sugar
1 egg white
peppermint essence

Sift the icing sugar into a  bowl and blend with enough beaten egg white to form a stiff paste.  Add a few drops of peppermint essence to taste.

Knead the paste lightly in the bowl using the fingertips.  Roll the paste out 1/4 inch thick between sheets of non-stick or waxed paper. Stamp out 1 inch rounds with a cutter, I used to use a suitable bottle top, and leave the mints to dry for about 24 hours.

You could also use food colouring if you want a different shade of peppermint cream or dip the top in chocolate if you want to do something different.  Anyway hope it is a success.   :) busy_lizzie

Not sure but any older type recipes I goto great british kitchen forgotten their url but just google or yahoo it. they are good.

       Hi   This recipe, the wife has used for many years.
   
   1lb Icing Sugar
   White of 2 eggs
   1 tablespoon of cream or milk
   Peppermint Essence

   1     Beat white of eggs
   2      Add peppermint essence and milk
   3     Gradually mix in icing sugar       
   4     Knead mixture into a ball and leave for on hour
   5     Roll it out 1/4 inch thick on board dusted with icing sugar
   6     Cut into small shapes
   7     Leave for 24 hours to harden
