Scorzonera/salsify

I bought a packet of salsify last Spring but the results look like scorzonera!





I grew them in a deep bucket and they forked quite alarmingly!  Can I heel them into a raised bed now they have been cleaned of soil - or would it be better to freeze them?

Cant really pass comment this year, but should have answer next season. Purchased a pkt of scorzonera myself earlier this month, so with luck will have my own produce next harvest.

How intriguing - what colour is the flesh when you cut them? Someone may know if they can cross...me, I never managed to grow either to a decent eating size, so congrats on that anyway. FWIW, I'd freeze rather than cold store, I think they may shrivel.

The flesh is very white and exudes a very sticky substance which is difficult to remove from ones hands. I watched Celebrity Master Chef last night and noticed that several chefs used salsify in their dishes - the raw veg looked no different to mine (except they had nice straight roots!) so maybe mine is salsify after all, though it looks quite different to the picture on the T & M seed packets where it looks more like a hairy parsnip!

I'm going to try pan roasting some in butter - the judges seemed to like it that way.

I think I'll wrap the rest well after separating the roots and see how it keeps in the fridge.
